What do I cook for dinner today?
It’s like being a contestant on a game show, but instead of winning a fabulous prize, you’re just trying to avoid another round of cereal and milk. At times it seems like every time I decide, the freezer is against me. Let's have spaghetti bolognese, no mince, or another favourite, palm chicken; guess what, no chicken. It’s always when I finish late; what is that about? When I have all the time in the world, I have so many ingredients; the problem becomes, what do I cook? I have so many recipe books. Clearly I don’t like choices.

So tonight folks, easy dinners are off the menu.
Note to self: improve meal planning.
I did start doing this a while ago, I got a chart stuck it to the freezer and wrote out all the dinners for the week, it worked really well. However, when things work really well, they stop becoming a priority. I wrote the plan three months ago and shopped specifically, so this is not helpful today. I really need to start this again.
I batch cooked for a while.
Facebook Reels showed me all these videos about batch cooking. I have to say this is a genius idea. So I brought some foil containers and raided the pantry for all the Chinese tubs that I save for a rainy day; I can finally use them. I made my list of lunches and dinners, wiped the dust off the apron and turned the cooker on.
After about ten hours of non-stop cooking (who knew it took so long), we had beef lasagne, vegetable lasagne, sausage and tomato casserole, Suffolk hot pot (it’s not actually called that but we call it that), cottage pie and curry. We had loads, filled the freezer; I had to convince my other half that we needed a small chest freezer, as we only have an under-counter one. It was amazing, I really expected an easy month.

Two weeks they lasted.
A whole six weeks' worth.
That was the best two weeks' work lunches my lot have ever had.
